RECIPE OF THE MONTH:
Blue Mesa Chili

 

From Judy Guinn - Whitefish, WI

Goes great with SANTA FE CORNBREAD or COUNTRY WHITE BREAD!!!

1 lb. ground beef                             1/2 c. chopped onion
1 T. chopped garlic                          1 T. chili powder
1 1/2 T. cumin
4 oz. can chopped green chiles - drained
1/4 c. tomato paste
8 oz. tomato juice
15 oz. can pinto beans-drained & rinsed (optional)

Brown ground beef with onions and garlic. Drain grease. Add remaining ingredients. Bring to a boil, then cover and simmer stirring occassionally for 1 hour. Add more tomato juice or water if too thick. Add beans towards the end of cooking time, if desired. Serve topped with grated Cheddar Cheese and sour cream, if desired. Try it over noodles to cut down on the heat. Makes 4 servings.
